Ingredients
Meatballs
- 1 lb of ground chicken (preferably thigh meat)
- 1/2 cup of breadcrumbs (panko or regular)
- 1 large egg
- 3 cloves of minced garlic
- 1/4 cup of red onion (finely chopped)
- 1/4 cup of parsley (finely chopped)
- 2 tbsp of fresh mint (finely chopped)
- 1/4 cup of feta cheese (crumbled)
- 1/4 cup of sun-dried tomatoes (oil-packed, drained)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil (for frying)
For the Tzatziki Sauce
- Greek yogurt: 1 cup
- Cucumber: 1/2 cup, grated and drained
- Garlic: 1 clove, minced
- Fresh dill: 2 tablespoons, chopped
- Lemon juice: 1 tablespoon
- Olive oil: 1 tablespoon
- Salt: 1/2 teaspoon
- Black pepper: 1/4 teaspoon
Instructions
Mix the ingredients:
In a large mixing bowl, combine the ground chicken, breadcrumbs, and egg. Mix until combined. Add the minced garlic, chopped red onion, parsley, mint, feta cheese, and sun-dried tomatoes to the mixture. Sprinkle in the cumin, coriander, dried oregano, salt, and black pepper. Gently mix the ingredients until well incorporated. Be careful not to overmix as this can make the meatballs tough.
Shape the meatballs:
With slightly wet hands, form the mixture into meatballs, about 1 to 1.5 inches in diameter. This should yield around 20-24 meatballs. Place the meatballs on a baking sheet lined with parchment paper.
Cook the meatballs:
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, add the meatball in batches, making sure to not overcrowd the plan. Cook each meatball for 4-5 minutes on each side, turning them carefully to ensure they brown evenly and are cooked through. Alternatively, you can bake the meatballs. Preheat your oven to 400F. Place the meatballs on a baking sheet lined with parchment paper and bake for 15-20 minutes or until cooked through and golden brown.
Preparing the Tzatziki Sauce:
Grate the cucumber using a box grater. Place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible. In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and olive oil. Season with salt and black pepper. Stir until well combined. Taste and adjust seasoning if necessary.
